Valuation of the fifth quarter
Abstract
The advantages coming from the right exploitation of the fifth quarter are being reviewed. Besides its contribution to the viability of a modern slanghtering plant, covering great part of fonctioning expences, is not damaging to the consumer. The price of these products, in respect to the whole meat's value, varies from country to country as their value is subject to the rule of «offer and demand». Concerning Greece, the application of modern technology, constitues a strict rule for a radical reorganization of the units being comprised in the commerces circuit of these products. Proposals are made for a promotion programme to be adopted by the state for the valuation of the filth quarter by and sideproducts
