Περίληψη

Οι αφλατοξίνες είναι μυκοτοξίνες που έχουν διερευνηθεί ιδιαίτερα και είναι πιθανό να ανιχνευθούν σε τρόφιμα και ζωοτροφές. Τα ζώα εκτίθενται στη δράση των αφλατοξινών μέσω της κατανάλωσης μολυσμένων ζωοτροφών φυτικής προέλευσης. Στη συγκεκριμένη ομάδα μυκοτοξινών, η αφλατοξίνη Μ1 είναι υδροξυλιωμένος μεταβολίτης της αφλατοξίνης Β1, που παράγεται στο ήπαρ και απεκκρίνεται μέσω του γάλακτος. Η παρούσα έρευνα είχε ως στόχο τη διερεύνηση των επιπέδων αφλατοξίνης Μ1 στο γάλα συών κατά τις πρώτες 3-5 ημέρες της περιόδου γαλουχίας, μετά την κατανάλωση φυσικά μολυσμένων ζωοτροφών με αφλατοξίνη Β1, στην περιοχή Βοϊβοντίνα, στη Σερβία. Συνολικά εξετάστηκαν 110 δείγματα γάλακτος συών με τη χρήση ανοσοενζυμικής μέθοδου (ELISA), από 11 χοιροτροφικές εκμεταλλεύσεις που βρίσκονται στη συγκεκριμένη περιοχή. Περίπου 97% των δειγμάτων είχαν ανιχνεύσιμα επίπεδα αφλατοξίνης Μ1. Τα επίπεδα της συγκεκριμένης μυκοτοξίνης κυμάνθηκαν από 5 έως 165,4 ng/L. Τα αποτελέσματα της έρευνας υποδεικνύουν την ύπαρξη πιθανού κινδύνου για την υγεία των χοίρων, που σχετίζεται με τη μόλυνση των ζωοτροφών με αφλατοξίνη Β1 στις εκτροφές της συγκεκριμένης περιοχής. Το σημαντικό ποσοστό θετικών δειγμάτων γάλακτος συών όπου ανιχνεύθηκε αφλατοξίνη Μ1, είναι δυνατό να συσχετιστεί με την παρουσία περιστατικών χρόνιας ήπιας τοξίκωσης από αφλατοξίνες.
